Old school sake

Spicy, funky and slightly feral are some of the more unkind words spoken about Yamahai and Kimoto sake. These two styles of sake are made with differing old school (moto) starters that promote firmer acids, richness and complex characteristics. They are off the scale in hipster coolness and should all be wearing tweed jackets with leather elbow patches.
