Yamamoto Yamahai Junmai Tensugi 720ml
Fermented in Japan's one and only Tensugi tank - a Japanese cedar native to Akita. Tensugi is so rare that nowadays is unable to be harvested. Yamamoto san found a 200yo Tensugi tree that was felled in 1975 and commissioned it to be made into a brewing tank. It is the only tank of its kind in all Japan and with care Yamamoto will be able to brew sake in it for the next 50 years.
And now about the sake. This Yamahai sake is made from 100% Miyamanishiki rice and fermented entirely in the Tensugi tank after which it is named. Not your typical Yamahai. Subtle nose of apple, peach and cedar. The juicy palate starts with an array of peach, apple, citrus and pine along with hints of mineral. Cedar & spice increases as the sake warms in the glass.
