Takacho Junmai Bodaimoto 720ml
Bodaimoto is an ancient way of making sake from over 500 years ago that had disappeared until quite recently. Each year a group of brewers join the monks at Mt Bodai in Shoryaku-ji temple, Nara to create a sake starter in the same way it was prepared in the 1400’s. The temple has a high population of natural lactic acid bacteria needed to create a yeast starter high in lactic acid.
Tempting aromas of jersey caramel, apricot and very fresh camembert.
Bodaimoto styles of sake tend to be rich and bold and this does not disappoint. Overt flavours of manuka honey, citrus, ripe banana, chestnut, black muscat grapes and brown sugar are well balanced with firm acidity. There is an overarching sweetness but by no means cloying.
In the sake world you won’t hear this too often but this sake is something that will age well. Buy one bottle to drink now and another for 5 years down the track and maybe another for the 10 year mark.
It is extremely rare to see Bodaimoto sake because the very few breweries who produce it do so in the smallest quantities.
