Senbazuru Aged Daiginjo 900ml
This sake is aged for 5 years in bottle at zero degrees Celsius but still exhibits freshness like it was brewed yesterday.
Start a little cooler in the glass and let it develop to reveal a multi layered complexity. Orange peel, cedar forest, parchment and a surprising freshness on the nose. Layers of flavour are ever changing as the sake warms in the glass with custard apple, pineapple, brown sugar, raisin, melon and papaya ... some of the flavours you can expect. This sake finishes with super fine grained and focussed acidity that encourages another glass.
This super limited sake is a great lesson on how good aged sake (kept in pristine condition) can be.
