Dewatsuru Daiginjo Koshu Ideha no Mezame 720ml
This limited edition low temperature aged Daiginjo is milled to just 35% and kept in bottle for 20 years. The colour remains fresh and bright and the nose has retained a hint of melon and citrus with a slight earthiness reminiscent of kasutori shochu.
This is sake to sit and sip after dinner with hard cheese and all the condiments. Deep flavour, savoury caramel, honey, spice and a pleasant astringency with a dry finish. We found this sake to be better the next day or dare we say this is a sake you could decant.
