Shiraki brewery was founded in 1835 but did not start focusing on Koshu until later in 1971. Their koshu is made from the eating rice "Nihonbare" milled to 70%. Their aim is to maximise the amount of umami from rice. Shiraki produce some of the finest Koshu in the sake world today.
