Kaze No Mori Akitsuho 657 Henpei Seimai - 720ml

For sake it is important to polish the rice to remove the outer layers and husk (rich in fats and protein) to leave a higher ratio of starchy core (shinpaku). The more the rice is polished the more ‘pure, clean’ flavours are expressed by the sake.
Regular rice polishing machines take a grain of rice that is shaped like a rugby ball and turn it into a shape more like a soccer ball which can remove some of the shinpaku along with leaving behind more of the unwanted elements around the girth of the rice grain. Henpei Seimai - a new super flat rice polishing method - removes the same amount of rice from all surfaces and efficiently removes unwanted elements, leaving the shape much like the original rice grain.
If the same rice was polished in the two machines to 65% the Henpei polished rice will have a starch ratio similar to rice polished to around 45% standard milling.
The Akitsuho Henpei Seimai 657 is made in the using the same brewing techniques as the regular Akitsuho 657 except for being milled using super flat milling techniques.
The result: An exceptional sake that is like a sophisticated older sister of the original Akitsuho with refined characters of apple cider, stone fruit, fresh banana and minerals with a crisp, clean and refreshingly short finish. Outstanding well-crafted sake by Yucho Shuzo.
