Toko Dewanosato Junmai Ginjo Genshu 720ml
This sake drinks much drier than its SMV of -4 might suggest, especially when well chilled. Made from 100% Yamagata rice and local yeast this sake is clean and refreshing. Imagine driving through Twin Peaks with melting snow surrounded by Douglas Firs while eating a fruit salad of starfruit, spearmint and pear. (Sakeshop by no means endorses drinking and driving).
When we learn about sake we are taught that SMV is a good indication of the sweetness level of the sake. The mantra is the higher the number the dryer the sake. It's a fairly reliable measure, except of course when it isn't. Factors such as acidity, ABV and how much water is added post brewing affect the SMV relativitity.
In any case, this is a session sake that will delight many a sake drinker.
