In the age old argument of glass half empty v’s glass half full this sake sits in the “oh shit, my glass is already empty” category. Made from 100% Omachi rice this Junmai is milled to just 80% and is completely unpasteurized. Not your typical Junmai, this sake focussed more on refined brewing techniques and Nama super freshness.

This sake is so, so, good and screams Nama and Omachi in equal amounts. An extremely well balanced display of lemongrass, nectarine, cherry, sugarcane, chestnut with integrated acidity and a rich chalky, earthy texture. This junmai sake has umami in spades.
