Yamamoto san has jumped the shark by incorporating 5 Akita rice varieties and 5 Akita yeasts in one bottle of Junmai Daiginjo. This sake is all about the palate but a subtle nose of pear and papaya will get the juices flowing.
A little more restrained palate than Yamamoto's usual flamboyant style. But nevertheless juicy and balanced. Sweet pear, underipe pineapple, lemongrass, basil with a touch of melon. A ‘high-five’ to Aramasa with the inclusion of Number 6 yeast.
